Licence To Grill is our favorite! Robbie Rainford not only has great gourmet grilling recipes, but he has fun presenting them. He has a very happy and pleasant manner that makes him easy to watch. His outdoor kitchen and pool are beautiful. The music is cool and catchy and we end up humming it all day. Everything about the show is great, why can't other cooking shows be as entertaining? We watch it as much for entertainment as for grilling recipes. His recipes are more complex than basic grilling - they are really gourmet! Everything of his we have made has been excellent. He is a little nervous in the first episode or 2, but afterwards he loosens up and his personality comes thru. We were very happy to find this DVD after our cable company changed their lineup and we lost his show. Now we NEED Volume 2... and 3 and 4! "Its time to grill... Action!"

I bought these two volumes new and spent over $50 doing so. You get two DVDs with three discs in each. Why would I buy DVDs if I have the cookbooks? I find watching Ina Garten cook in her kitchen very relaxing after a hectic day. SHE is doing the cooking, not me. SHE is having to clean up, not me. Of course we all know she has a team to do all the prep work and clean up, but we can pretend, can't we? Lots of her earlier episodes with lots of food and friends. Lemon cakes, shrimp dishes, brownies, salads, entrees. I recently made her Szechuan Noodles and the first bowl cost me $40! That's 'cause I didn't have any of the ingredients you need to make it! But once you splurge on all the condiments, you're home free. I have eaten Szechuan Noodles all week! I can't get enough of her recipe. Hot, cold, warm. They are SO good! That recipe is on the DVD as well. She isn't cutesy like a lot of the Food Network people. I really dislike that. Cute doesn't work for me. I want someone with substance who knows what she's doing. Ina Garten is that gal. You can buy them new, like I did, or used. Just get them both! You will find yourself in your kitchen at odd hours of the night cooking something! They're addictive. Hope she comes out with Volumes 3, 4 and on.

Most episodes are in black and white. It's definitely vintage television. Some shows I can find in her companion book, The French Chef - ISBN 0-345-42542-1; others like The Spinach Twins and French Fries I can't even find the individual recipes in the index let alone the show.
Each DVD contains a couple of printable recipes, and there's also a Julia Biography.

This is an entertaining video to watch. He cooks some yummy things. True to Bobby Flay, there are always a MILLION ingredients and there's always multiple toppings and sauces for a dish. I'd like to taste some of his dishes cooked by him because I've yet to create one of his entire recipes that made sense as far as all the extra sauces and that I was completely happy with the way I cooked it. I'm no pro, but I do cook a lot, and I live in a green-conscious, gastronomic area. We aren't eating miracle whip and white bread around here. Anyway...this review is not so much about his choices in sauces and chutneys and extras that he adds but the fact that this video has 0 and I mean zero directions as to how much of the ingredient to add or any recipes anywhere on the DVD. I searched the entire thing looking for them and was shocked they weren't anywhere to be found. I made the fra divolo bbq T-bones and had to go to [...] to get the recipe. So, unless you are someone who can watch another person make something in a video and know exactly how much of what to add by watching them...you are going to have to go hunting for the recipes if you want to make any of them. Perhaps it is my own ignorance showing in this review, but I thought the point of having a cooking video is to help the cook make the dishes themselves. I wouldn't think it was for the entertainment factor itself.

This DVD set is exactly as described -- plenty of Good Eats episodes on demand. Each disk only contains three episodes (which run twenty minutes without commercials) but each episode also includes ten-fifteen minutes of Alton Brown addressing questions about that episode that have been sent in by viewers. As an extra bonus, the DVD booklets include the recipes.

Ok, so is it going a little far to call Alton Brown my hero? He is truly an amazing teacher and cook and this series puts that forward. For those who don't know, Good Eats mixes science and food in a completely original way. While showing you how to use basic ingredients and techniques, Alton not only makes you a cook, but explains the concepts and science behind them without making your brain hurt or boring you to death. He also explains the best products to buy and how to tell good food from not so good food. Cleanliness is a big part and he does go over kitchen hygiene. To do all this, he uses wacky people and zany props to make the show a little more interesting.
Seeing the first season was actually interesting as there were a lot of similarities, but a lot of differences as well. The acting was worse, but that's probably accounted for by the fact that he used real people that probably had never been on tv before as compared to the experts he uses in later seasons. This made for some funny times though and awkward discussions. He also had his grandmother as a guest, which was very sweet and was she ever sassy! The infamous W made her appearance (she's Alton's equiptment specialist) and the banter between the two was hilarious as ever.
The episodes are as follows:
Steak Your Claim:
Alton shows us where steak comes from (for the real city folk!), what cuts are what, how meat is butchered correctly, and finally, how to cook that perfect steak at home. The instance in this case was a delectable rib eye that any cook could do. There was also a nice section on taking care of cast iron cookware.
This Spud's for You:
This one's about that every popular potato. Alton takes the time to explain the different types of potatoes by starch content, and what each is good for. He also shows us how to make a good baked potato, excellent comforting mashed potatoes, and how to throw together a gratin using whatever's in your fridge.
The Egg Files:
Alton visits an egg plant and explains how the different grades are done, how to tell a fresh egg, and how to tell a cooked egg in its shell from an uncooked one. He also shows how to handle eggs safely, especially for over easy type eggs and makes the perfect scrambled egg.
Salad Daze:
Here Alton shows us how to keep salad crisp and select a good mix. He also shows how to make vinaigrette and the every popular Caesar dressing from scratch.
A Bird in the Pan:
No this isn't about Turkey, but rather about how to achieve the perfect roasted chicken and the equipment needed to do it. Alton makes it so easy and shows how to develop a good roast while taking sanitary precautions.
Churn Baby Churn:
Alton explores homemade ice cream, granitas, and other delicious frozen favorites. He uses materials only found in a home (including a table top ice cream maker) and even some that only require your freezer.
The Dough Also Rises:
Together, Alton and his grandma make the perfect biscuit. They both have different methods, but turn out some piping hot baking that goes perfect with butter.
Gravy Confidential:
Alton delivers the secret of making perfect gravy in this episode. And he explains quite a few from sausage gravy, to country, to red-eye.
Romancing the Bird:
This one is about Turkey and has Alton scrambling on Thanksgiving to put together something for his family. He explains what you should and shouldn't do, and a great method of brining for preparing a turkey.
A Bowl of Onion:
In this episode Alton visits a soup, most notably, the French Onion Soup. Using some simple cookware he caramelizes his onion perfectly and puts together a base for this most comforting of soups.
Hook, Line, and Dinner:
What else, fish? Alton explains how to properly prepare different fishes and choose the best and freshest fillet on the market. He also explores cooking fish while outside in the wilderness.
Pantry Raid-Use Your Noodle:
Alton puts together some great dishes using the ever popular pantry item of the noodle. He also explains how to store and use certain kinds.
Power to the Pilaf:
This one of course has his exploring different types of rice and how to make the perfect pilaf. He explains how to cook rice (which has always been difficult for me) and what seasonings complement the rice and which don't. He also explains a bit about saffron, a popular spice used with pilaf.
The Art of Darkness:
With a Wonka motif, Alton goes and creates the perfect chocolate mousse. He also makes some delectable lava muffins and visits a chocolate making factory in California.
While this edition is a bit unpolished I really liked it. It was real and Alton was his most charming and very intelligently described food. I could watch these episodes over and over (and did a few) and still pick up on something new each time. I definitely will feel a little more confident when cooking some of these items in the future. This is a show for foodies, scientists, and anyone who likes good entertainment!

Season Four of No Reservations is where I think the show really started to pick up steam on the entertainment side of the house. Whereas the show used to revolve simply around Tony going to various locations and eating food, this is where the Travel Channel really started figuring out that Anthony Bourdain is probably their biggest star asset.
If you're a food show purist, you will probably be a little annoyed with the increased frequency of the "Tony, go hurt yourself," skits in the various locations. Season Four includes the zip lining and cave diving bits as well as the Greek shipwreck party and the night out at Kilauea. The entire episode focusing on Anthony going back into the kitchen at Les Halles will probably irk you too as there is little to no actual food tasting being done.
If you're a Bourdain fan, this will most likely be one of your favorite seasons; probably because of the Les Halles episode (and lets be honest, Eric Ripert makes everything better). This season is a very introspective one and it seems like Tony's really taking the time to figure himself out during the course of the season. You see a lot less of the old "A Cook's Tour" and "No Reservations: seasons 1 and 2" Bourdain - the smoking, drinking, swearing version of Tony. Yes, he still swears a lot, but as he made his transition into fatherhood, the mantle of responsibility was almost palatable (no pun intended). This led to some great personal moments in the Uruguay episode with his brother Chris, trying to reconnect with their family's history. Serious items aside, there's the great Southwest road trip episode with Alice Cooper and the always entertaining Ted Nugent.
If you're a foodie, there is so much to drool over in this season. There is a cavalcade of culinary giants showing up in these episodes: the before mentioned Eric Ripert, Masaharu Morimoto (Your Iron Chef!), Marco Pierre White, and he finally buries the hatchet with Emeril Lagasse. The entire episode on Spain is nothing but pure, unadulterated food porn. As always, Tony's love of Japan really shows through every time he visits the country, and this time is no different.
One of the things that makes No Reservations such a great show to watch is the fact that you're not just sitting there watching Tony eat multi-hundred dollar meals, but instead he's getting down at street level, attempting to eat what the locals eat. If you're lucky enough to have Tony visit an area or country where you grew up in an episode, you come away thinking that he has somehow managed to truly capture a little bit of your hometown. Now imagine that he's doing that for each and every location that he visits and you get an inkling of why this show is so great.
